Steamed beets
with goat cheese spread

Ingredients
12 medium-sized beets with leaves
3 tbsp olive oil
Salt
Pepper
Rosemary
250g fresh goat cheese
1 cup cream cheese
1/2 cup cream
1 tsp grated lemon peel
1 1/2 cups chopped pistachios
Directions
Clean the beets in water, then removes the stalks and leaves. Place them in the steam tin and sprinkle salt over them. Turn on the oven and cook for 30-40 mins on steam.
While the beets are steaming, make the goat cheese spread. Mix the goat cheese, cream cheese, cream and lemon peel to a smooth spread. Put the spread on a serving plate.
When the beets are ready, peel them and cut into smaller pieces. Place them on top of the spread, sprinkle over the pistachios, top with some sprouts and a drizzle of olive oil.
