Steamed cod
with a tomato bullion and herbs

Ingredients
4 pieces of cod back 150 g each
1 ½ tbsp salt
2 cups water
500 g tomatoes - different sorts
1 cup white wine
1 cup tomato passata
3 branches of mix herbs - basil, rosemary and
thyme
3 cloves of garlic
1 celery stalk
1 carrot
4 tbsp olive oil
Salt
Pepper
Fresh basil to garnish with
Directions
Start by mixing water and salt together until the salt dissolves. Place the cod in the mix and let it sit for about 1 hour.
Then prepare the tomato bullion. Finely chop the carrots, onions and larger tomatoes and put in a pan with olive oil. Fry for about 5 mins. Add the tomato passata, wine, salt and pepper. Put on the lid and let it boil on a low heat for about 1 hour.
Chop the tomatoes into smaller pieces and place in a steaming tin. Take the fish out of the salt mix, place it in a steaming tin and steam for 5 mins. After that, put the fish in the tin with the tomatoes and steam for 3 mins.
While the fish is steaming, drain the bullion through a sieve and pour back into a pot. Then simmer until the fish and the tomatoes are streamed. Season with salt and pepper if needed.
Place the cod and tomatoes on a plate and pour the bullion over. Add some olive oil, fresh basil and serve.
