Steamed artichokes
with seasoned butter

Ingredients

4 medium-sized artichokes
1 lemon
Salt

Tomato butter
150 g butter (room temperature)
6 sun dried tomatoes (in olive oil)
1 fresh tomato
2 anchovies
2 cloves of garlic
1 bunch of fresh parsley
Black pepper
Sea salt

Directions

Start preparing the artichokes by cutting off the stalks. Squeeze a slice of lemon over them and season with sea salt. Preheat the oven and put the artichokes on a cooking tray and cook on steam for approximately 30-40 mins. They are ready when the leaves loosen easily.

While the artichokes are steaming, start preparing the butter. Cut the fresh tomato and remove the seeds. Put the butter in the blender, add the rest of the ingredients and blend to a chunky consistency. Pour into a bowl and serve together with the warm steamed artichokes.
